Why can one process have multiple diagrams, and what's each one good for?

A diagram is just a graphical representation of a process — multiple diagrams share one process definition but each can use a different subset of steps and visualization.

So you might have one for business discussion, one more detailed for implementation/config, and one dedicated to technical process monitoring.
